The soup is cooked in a large iron kettle custom-made for a foundry in Kyushu. 60 kg of domestic pork bones, chicken bones, momiji mushrooms, and beef bones are carefully cooked for 14 hours, and the soup is then aged for another full day before being served. The noodles are made to order to match the rich and deep broth, and are served in their best condition, with the amount of boiling adjusted in seconds according to the customer's preference. You can also add our homemade spicy takana or red ginger for a different flavor and delicious taste.
